Tired of Burgers and Fries? Here’s a tasty and easy to cook dish that can serve you and your family for days or host a gathering.
You’ll be cooking using:
- Bake/Grill meat of choice (Chicken is best)
- Fry and then simmer in large non stick pan
- Cook rice in a rice cooker
You’ll do all this in parallel.
For the meat, we suggest a grill pan that you can put water in the bottom, so the meat is sitting on the grill. We chose a BBQ rub and chicken legs. You can’t overcook the meat, cook it on high such as 425 until it falls of the bone. The water will keep it from getting dry.
For the rice, use Jasmin rice and a rice cooker. When finished, complete it with Cumin, Turmeric, Sesame Oil, Garlic powder or Salt to taste, and if you like Butter or Coconut Oil.
For the main dish, first fry veggies of choice at high heat, with Oil or Water. We suggest:
- Bok Choi
- Corn
- Onion
- Green Onion
- Peppers
- Tomatoes
- Chickpeas
- Kale / Collard Greens
- Lemongrass (or similar, to taste)
Once they are nice and pulverized, add Coconut Milk and turn the heat down to a simmer. Add some fruits such as Apples, Oranges, or Bananas. Add Green Curry Paste. Add Chicken (already pre-cooked). Slow cook / simmer for at least 30 minutes, without top (let some of the water cook away).
Finally, it will look like this:
Serve with rice, so that half of the plate is the dish and half with rice. Goes well with Kombucha or Sparkling water.
This re-heats well and stores well. Use organic ingredients if possible. Best places nearby to get ingredients are Fresh Market, Earth Fare, or Whole Foods.
